RESUMO: 

O amendoim (Arachishypogaea L.) da variedade Cavalo Rosa &#xE9; utilizado na
alimenta&#xE7;&#xE3;o humana,visto que possui caracter&#xED;sticas nutricionais importantes e ben&#xE9;ficas &#xE0;
sa&#xFA;de, entretanto, apresentam inibidores de proteases. Esses inibidores s&#xE3;o considerados
fatores antinutricionais,embora promovam sa&#xFA;de por meio do est&#xED;mulo da saciedade,
devido ao aumento da produ&#xE7;&#xE3;o da colecistocinina. A obesidade, uma epidemia mundial,
apresenta diversos tratamentos, dentre eles, aqueles que envolvem a alimenta&#xE7;&#xE3;o. Neste
estudo foi avaliado o efeito dos alimentos &#xE0; base de amendoim cru (in natura) e torrado da
variedade Cavalo Rosa na redu&#xE7;&#xE3;o do ganho de peso em camundongos. Para confirmara
presen&#xE7;a do inibidor de tripsina nos alimentos, foram obtidos seus extratos brutos proteicos.
A atividade antitr&#xED;ptica foi detectada por meio do ensaio de inibi&#xE7;&#xE3;o da atividade da tripsina.
O ensaio in vivo ocorreu, com 6 animais por grupo, para avaliar o consumo alimentar,
ganho ponderal e digestibilidade proteica, utilizando os alimentos contendo tal inibidor. Os
extratos brutos dos alimentos com amendoim in natura e torrado apresentaram 80% e 30%
de inibi&#xE7;&#xE3;o, respectivamente. Na an&#xE1;lise do consumo alimentar e ganho de peso, verificouse 
a redu&#xE7;&#xE3;o em ambos os grupos quando comparado ao grupo padr&#xE3;o. Relacionando
resultados da digestibilidade proteica verdadeira foi observado que ambos os grupos, ao
final do experimento, apresentaram redu&#xE7;&#xE3;o significativa da digestibilidade (60,08&#xB1;2,03
e59,83&#xB1;4,90, respectivamente) comparando com o padr&#xE3;o (70,41&#xB1;3,12). Quanto &#xE0; nutri&#xE7;&#xE3;o,
considerando a import&#xE2;ncia do amendoim na alimenta&#xE7;&#xE3;o humana, as implica&#xE7;&#xF5;es da
presen&#xE7;a do inibidor e dos dados da digestibilidade no aproveitamento proteico, v&#xE3;o
depender da quantidade, frequ&#xEA;ncia de consumo e tratamento t&#xE9;rmico aplicado.

ABSTRACT: 

Comparison of the effect of the raw and roasted peanut (Arachis
hypogaea L.) food on the weight gain reduction in an experimental model. Peanut
(Arachis hypogaea L.) of the variety Cavalo Rosa is used in food because it has important
nutritional characteristics that are beneficial to health. However, it presents protease
inhibitors. The protease inhibitors are considered anti-nutritional factors, but they promote
health by stimulating satiety, because of the increased production of cholecystokinin.
Obesity, a worldwide epidemic, presents various treatments, including those involving food.
It is intended to evaluate the effect peanut-based food in natura and roasted of the variety
Cavalo Rosa in reducing weight gain in mice. To confirm the presence of trypsin inhibitor in
foods, their proteins were obtained from crude extracts. The antitryptic activity was detected
by the assay of inhibition of trypsin activity. The in vivo assay was carried out with six
animals per group to assess food intake, weight gain and protein digestibility, using food
containing such inhibitor. The extracts of foods with peanut in nature and roasted showed
80% and 30% inhibition, respectively. In the analysis of food intake and weight gain was
found to decrease in both groups compared to the standard group. In relating results of true
protein digestibility was observed that both groups at the end of the experiment showed a
significant reduction in digestibility (60.08 &#xB1; 2.03 and 59.83 &#xB1; 4.90, respectively) compared
to the standard (70.41 &#xB1; 3.12). Regarding nutrition, knowing the importance of peanuts for 
human consumption, the implications of inhibitor presence and digestibility of the protein
utilization data, will depend on the amount, frequency of consumption and heat treatment
applied.
