Resumo:    O  objetivo  deste  trabalho  foi  determinar  a  concentra&#xE7;&#xE3;o residual  de  nitrato  e  nitrito em  produtos c&#xE1;rneos  comercializados  na  regi&#xE3;o  da  fronteira  oeste  do  Rio Grande  do  Sul,  Brasil. Foram  coletadas  36 amostras  de  embutidos  (salsicha,  mortadela  e  lingui&#xE7;a  mista  cozida  e  defumada)  de  diferentes  marcas  e lotes,  as  quais  foram  analisadas   em  triplicata   quanto  ao  conte&#xFA;do  de nitratoe nitrito atrav&#xE9;s  da espectroscopia  eletr&#xF4;nica  molecular,  conforme  o  m&#xE9;todo  anal&#xED;tico  oficial  do  Minist&#xE9;rio  da  Agricultura, Pecu&#xE1;ria  e  Abastecimento. Os  dados  deste  estudo  permitiram  constatar  que  houve  diferen&#xE7;a  significativa entre  os  lotes  de  todas  as  marcas  avaliadas.  Al&#xE9;m disso,  25,0%  das  marcas estavam  com  os  n&#xED;veis  de nitrito de s&#xF3;dio superior ao limite estabelecido pela legisla&#xE7;&#xE3;o brasileira (150 mg/kg). A marca B (lote 2) do produto c&#xE1;rneo salsicha apresentou um valor (244,69 mg/kg de nitrito) 63,1% maior que a toler&#xE2;ncia m&#xE1;xima permitida pela IN 51/2006. O consumo de apenas 18,63 g deste embutido em um dia poder&#xE1; acarretar em consequ&#xEA;ncias  para  a  sa&#xFA;de,  visto  que  excede  a  Ingest&#xE3;o  Di&#xE1;ria Aceit&#xE1;vel.  Portanto,  esta  pesquisa demonstra a neglig&#xEA;ncia das ind&#xFA;strias quanto &#xE0; padroniza&#xE7;&#xE3;o de seus produtos curados, al&#xE9;m da falta de fiscaliza&#xE7;&#xE3;o dos &#xF3;rg&#xE3;os competentes, tendo como consequ&#xEA;ncia a quantidade excessiva de nitrato e nitrito empregadas na formula&#xE7;&#xE3;o dos alimentos.

Abstract:    The objective of this work was to determine the residual concentration of nitrate andnitrite in meat products sold in the western border region of Rio Grande do Sul, Brazil. 36 samples of sausages (sausage, bologna  and  mixed  sausage,  cooked  and  smoked)  of  different  brands  and  lots  were  collected,  which  were analyzed in triplicate for the nitrite and nitrate content through molecular electronic spectroscopy, according to the official analytical method of the Ministry of Agriculture, Livestock and Supply.The data from this study showed that there was a significant difference between the lots of all brands evaluated. In addition, 25.0% of the  brands  had sodium nitrite  levels above  the limit established by  Brazilian  legislation (150 mg/kg).  The B mark (batch 2) of the meat product sausage showed a value (244.69 mg/kg of nitrite) 63.1% higher than the maximum tolerance allowed by IN 51/2006. The consumption of only 18.63 g of this sausage in one day may have   health   consequences,   since   it   exceeds   the Acceptable   Daily   Intake.   Therefore,   this   research demonstrates  the negligence  of  the  industries  regarding  the  standardization  of  their  cured  products,  in addition to the lack of inspection by the competent bodies, resulting in the excessive amountsof nitrate and nitrite used in the formulation of food.
