Resumo:    A  araruta  &#xE9;  considerada  uma  hortali&#xE7;a  n&#xE3;o  convencional  comumente  encontrada  em  regi&#xF5;es tropicais da Am&#xE9;rica Latina. A esp&#xE9;cie &#xE9; rizomatosa e suas ra&#xED;zes s&#xE3;o utilizadas para produ&#xE7;&#xE3;o de f&#xE9;cula e farinha, que apresentam elevado teor de amido. Entretanto pouco se conhece sobre as peculiaridades para o cultivo da esp&#xE9;cie, assim como as condi&#xE7;&#xF5;es ideais de armazenamento, fato que contribui para as perdas p&#xF3;s-colheita e no processamento dos rizomas. Diante da necessidade de informa&#xE7;&#xF5;es sobre a conserva&#xE7;&#xE3;o em  p&#xF3;s-colheita  da  cultura,  objetivou-se  com  esse  trabalho  estudar  a  qualidade  dos  rizomas  de  araruta, cultivar Seta, em fun&#xE7;&#xE3;o do tempo e das condi&#xE7;&#xF5;es de conserva&#xE7;&#xE3;o, visando &#xE0; produ&#xE7;&#xE3;o de mudas e f&#xE9;cula. Ap&#xF3;s  a  colheita  os  rizomas  foram  separados  em  lotes  homog&#xEA;neos  e  acondicionados  em  c&#xE2;maras incubadoras  BOD  em  diferentes  temperaturas:  5,10  &#xBA;C  e  em  temperatura  ambiente  (19-23  &#xBA;C).  Durante  o armazenamento foi avaliada a perda de massa dos rizomas e ap&#xF3;s um periodo  de trinta dias foi produzido&#xE0;s mudas e realizado o processamento a fim de se verificar o rendimento da extra&#xE7;&#xE3;o de f&#xE9;cula a partir dos rizomas  em  conserva&#xE7;&#xE3;o.  O  delineamento  experimental  adotado  foi  inteiramente  casualizado.  A  perda  de massa  dos  rizomas  ap&#xF3;s  armazenamento  variou  de  28,03  a  46,93%.  O  per&#xED;odo  e  a  temperatura  de armazenamento  influenciaram  no  rendimento  de  extra&#xE7;&#xE3;o  da  f&#xE9;cula  de  araruta,  com  valores  entre  9,45  a 18,41  g.100g-1. Assim  n&#xE3;o  &#xE9;  recomendado  o  armazenamento  dos  rizomas  de  araruta,  visando  &#xE0;  produ&#xE7;&#xE3;o de f&#xE9;cula. Para a produ&#xE7;&#xE3;o de mudas &#xE9; vi&#xE1;vel utilizar rizomas armazenados em temperatura ambiente.

Abstract:    Arrowroot is considered non-conventional vegetables commonly found in tropical regions of Latin America. The species is rhizomatous and its roots are used for the production of starch and flour, which have a high content of starch. However, little is known about the peculiarities for the cultivation of the species, as well as the ideal conditions of storage, a fact that contributes to the post-harvest losses and the processing of the rhizomes. In view of the need for information on the postharvest conservation of the crop, the objective of  this  work  was  to  study  the  quality  of  arrowroot rhizomes,  Seta  cultivar,  as  a  function  of  time  and conservation  conditions,  aiming  at  the  production  of  seedlings  and  starch. After  harvest  the  rhizomes were separated in homogeneous batches and packed in incubator BOD chambers at different temperatures: 5, 10&#xB0;C and at room temperature (19-23 &#xB0;C). During storage, the loss of mass of the rhizomes was evaluated and  after  a  period  of  thirty  days  was  produced  to  the  seedlings  and  the  processing  was  performed  in  order to verify  the  yield  of  the  starch  extraction  from  the conserved  rhizomes.  The  experimental  design  was completely  randomized. The  loss  of  mass  of  the  rhizomes  after  storage  ranged  from  28.03  to  46.93%. Theperiod and the storage temperature influenced the extraction yield of arrowroot starch, with values  between 9.45  and  18.41  g.100  g-1.  Thus,  storage  of  arrowroot  rhizomes  is  not  recommended  for  the  production  of starch. For the production of seedlings it is feasible to use rhizomes stored at ambient temperature.
